Chillies

Chilli Peppers are members of the Capsicum family, and have been culivated for thousands of years. There is archaeological evidence that suggests that chillies were first cultivated in Ecuador over six thousand years ago.

The Spanish first introduced chillies to Asia in the sixteenth century, and the chilli is an important feature of many asian cuisines.

The ‘heat’ of chillies is measured by ‘Scoville Units’ . A solution of chilli extract is diluted in sugar syrup until a panel of tasters can no longer detect the ‘heat’. Of course this is subjective, but it gives a clear indication of the relative potency of each chilli.

The climate in Sri Lanka is ideal for the cutivation of chillies and at the Hopes and Dreams Village near Hikkaduwa, Sri Lanka we are cultivating, harvesting, drying and packing three main varieties of Chilli:

Jalapeno – approximately 5-6,000 Scoville Units

Habanero – approiximately 300,000 Scoville Units

Naga – approximately 900,000 Scoville Units – these are generally acknowleged as the world’s hottest chillies.
